I installed Delta Force 2 on my computer recently.
It has an *advanced* physics engine, bullets start to arc after reaching a certain distance.
After playing a few missions, I have found that the wind slows the bullets but it does not matter if you shoot against or with it.
The physics engine is rudimentary, you need to aim lower most of the time and the hitbox is generous. Shoot at someone's feet and he is dead.
I do not believe that air drag and air density is accounted accurately.I need to find out if I can die by my own bullets. Most games make bullets disappear if they are out of view.
DF2 is a hardcore game. You can sustain 3 or 4 hits before falling down. There are no checkpoints or save system. As a counter-balance, the AI dies in one hit with any weapon. It does not matter where you shoot at.
There is no recoil for your weapons.
The engine uses voxel instead of polygons to build the extremely large maps. Most of the action is within 1 square kilometer.
Gameplay part :
There are moving vehicles. You can jump inside enemy trucks to avoid a few groups of enemies. You are para-dropped in a few missions. You get to fly inside a helicopter a few times as a passenger.
Most of the combat happens outdoors. Close-quarters gun fights are near to unfair.
You have allies. They are useful at spotting enemies in the towers or behind boxes that you would not find otherwise.
"Compromising a mission" is a message for your team mates to play the heroes (and die quickly).
The AI will become alerted if it stares at you for a few seconds. Moving or being still does not change the timer from my experience.
The amount of noise made when firing is different for each gun.
It is possible to win a few missions by using the knife only if you are extremely patient.
The AI has different perception and alertness levels. Some AIs can see further than others or hear better.
The different alert levels are : walking, standing, looking, running, shooting.
The AI will always shoot when it knows where you are and sees you. For a few missions, the AI will try to ambush you from behind.
Delta Force 2 has an advanced editor. You can assign different proprieties to AIs and build your own trains.
The 3/4 of the fan sites are dead. There is 1 or 2 multiplayer servers open with people playing.
Community Campaign missions with custom audio and briefing is available. There was a large community between 2000-2004.
Delta Force 2 has many glitches. The AI can shoot through walls if its weapon sticks out. Ladders are mortal.
I have bought DF2 on the year of its release but never played multiplayer. I didn't bother to win the last campaign missions.
DF2 is a FPS shooter for the most part. It is too easy and often required to kill everyone with the sniper rifle. I would have liked a Thief-like AI with the option to render people unconscious as in the Splinter Cell series (ring airfoil projectiles and gas grenades).
A game with outdoor combat where the AI can get *increased* vision if you fire next to it or investigate areas with corpses (and panic) will give more realism in tactical shooters.
Half-Life 1 has a realistic behavior system for the AIs. Vortigaunt : (

---------------
I never played Operation Flash Point or Viet Cong. There is still time. :)
Edit : I remember that I used enemy tanks as cover in a few FPS-tactical games. It is hilarious.
Edit 2 :
DF2 : "Free NovaWorld™: online gaming supporting up to 50 players."
Delta Force Extreme 2 : "Join up to 150* players battles online in 5 challenging multiplayer game types."
The largest FPS online record is 1,000 players. I wonder how it will be in a decade...

If you want a game purely for the physics engine, I'd recommend Trespasser. It's a Jurassic Park game where you basically FPS/Survivalist your way through dino island.
Crate-stacking, mouse-controlled melee, rock throwing, weapon stashing, etc. are all present. Only real complain is that you can't jump for crap, and falls will kill you dead.
Old game, too. You might have trouble running it.

I would not recommend playing this game on Windows 7 or higher, it can destroy your whole OS.

I'd recommend Trespasser
These words in this order should never be uttered by any sane human being ever.

Are there no other games with the kind of fan missions Thief has?

You may enjoy Stalker: Shadows of Chernobyl (2007)
Elements it shares with Thief:
* FPS POV and Decent Physics
* Open Ended Maps with multiple entry points
* Challenging Combat
* Drips with Atmosphere
* A world that feels alive (and dangerous!)
* Sneaking is possible
* Some horror / supernatural elements
* An interesting and deep mythology
* Multiple Factions
* An active modding / content creation community
