I like Drop7 too. But Hookchamp is probably my favourite game at the moment—it's simple and satisfying (but challenging) and it doesn't require anything besides one finger to play.
Also recommended: Jet Car Stunts, which is like Trackmania but with tilt controls (that work, believe it or not), and Lexic, which is kind of a cross between Boggle and Hexic (and it's nicely polished, too, which is always a good thing with touch-interfaces (and any interfaces))

I figured the game would be cramped compared to the PC or even ipad versions, but playing through the first few levels felt natural, possibly even better than a mouse, on the small touch screen.

If you're worried about the control scheme they've addressed that. Now only if they could update MI1 to support the new control scheme too..
There is of course a free demo version for those who'd like to try before they buy.

World of Goo has finally made it to the iPhone and it is sweet. They've really done an amazing job in porting it to a touch based interface.
