I just might. Next time I'm at the store picking up more white cheeses (I practically live off of sandwiches, and swiss and provolone are my preferred cheeses), I'll pick some up.

Especially a nice crumbly buffalo mozzarella. Makes you realise that most mozzarella is basically glorified rubber (although it does have its culinary functions).

Emmental is good cheese, but relatively mild in flavour compared with most. The best cheddar I have ever tasted is Canadian unpasteurised (sorry pregnant ladies and immunocompromised folk) vintage 36 month matured cheddar. It is practically white, but somehow they've managed to keep a cheese going for 36 months without it being too salty, so the result is creamy, but also like someone is flying a cheddar gunship into your face with all guns firing.
