Unfortunately you made a mistake, to get anyone over the age of 12 interested in Star Wars these days you needs to watch at least A New Hope and the Empire Strikes back in one sitting... and this is only because by that time you have invested in two films, you might as well see the third in a night or two.
The fact that you made her sit through the snooze fest that is A New Hope without the payoff that is the rest of the trilogy is not a good launching point into First Contact, or sadly any star trek at all.
First Contact may have been a good first bet - but seen under the light of A New Hope, and without trek tinted glasses it is going to look equally bland and pointless.
It might have worked as first shot and it is a great Star Trek movie, but it mostly rests on teasing you with time travel fun ala Star Trek 4: The Voyage Home, and the whole TNG series of Borg goodness. You could have tried the first TNG TV movie (the first two episodes) as an introduction to real star trek.
Watch Serenity or Firefly (though if this is seriously mostly about practicing a language then the Joss Whedon patter/sarcasm/double speak might not be the most helpful).

She didn't like "A New Hope"? What size was your screen? That has to be seen on the largest mother you have. It loses so much impact on a small screen. Project it on a wall. Think BIG.
Too late now. All hope is lost. Don't even go near Star Trek. See instead how she reacts to Astro Boy.

I concur, definitely try again with a bigger screen. And if possible, make sure she's actually paying attention at all times. You miss so much of the star-nuances if you don't pay constant attention every time a midget with a foam head squeaks something racist.
