Maybe it is not about "not knowing", but about not "wanting to".
It is always a matter of taste whether you prefer "classic" Thief graphics (low-res textures, objects with less than 300 polys etc. etc.) or all those visual updates.
I personally prefer the old look without all those fancy things like t2water.
Why? I simply got used to it during the past 11 years and I want my Thief to stay as "classic" as possible. But that's just my very personal opinion and not meant as any offence against the people who are actually making those updates.

Could you explain how to do that? Do I need to manually edit the .exe, as I can't get the GUI version of DDFix to recognise the demo executable.
