Would it be possible , to make enemies climb ladders? Or at least throw something at you, when you're out of reach?

That's what archers are for. Place one in your map and the guard will run to the archer for help when you are out of reach.

I'm pretty sure you could set up an AI to switch to a bow when you are out of range. Might be a fair bit of work though. I seem to recall the keepers in Equilibrium switched weapons, though how reliable that system is I couldn't say.
