Hello!
Looking for good missions T1 and TG, type preference: city, castle, mansion, rooftop.

You have practically listed pretty much all the classics and many of my T1/G favorites, so I can only add a few more:
- "Business at Midnight" (city & city watch)
- "Events in Highrock" (classic city & castle mission)
- "Geller's Pride" (city & mansion, as far as I remember)
- "Hammerhead: Return to the Docks"
- "Hush, Hush...Sweet Harlot" (classic city mission)
- "Invitation to Castle Morgoth" (castle)
- "Lord Edmund Entertains" (manor)
- "Nigel’s Hidden Treasure" (city & mansion, I believe)
- "Ranstall Keep" aka "The Keep" by Alex "Jyre/Dashjianta" Thomson (somewhat influenced by the 1983 movie of the same name)
- "Shadow of Doubt Campaign" (I believe the first mission is a nice city mission - the last or second to last could be a mansion...)
- "The Keep" by Apache & Flakeman
- "The Rose of Bantry" (small & old city mission, also has a nice little ship to explore)
- "The Saint of Redmound" (warehouse, monastery - prequel of "Returning a Favor" by Morrgan)
- "The Shadow of Lord Rothchest" (city, mansion, rooftop - though of smaller scale, first mission of Purah (Calendra series & Autumn in Lampfire Hills)
Also:
- "Bloodstone Prison" (well, a prison mission, but it looks a bit like inside a castle ;), very well done - try it!)
- "Tears of Blood" (another Escape From Prison mission, so skip if you want)

Another one I did not see mentioned: The Vigil.
Neat little mission that I think is a sequel to Lord Edmund Entertains.

Events In Highrock would fit your bill perfectly, like Calibrator said. Saint of Redmound is another good one. Enjoy! :D

The Skull of Herzeloyde is also a pretty good fanmission taking place in a mansion.

"The Thieves Quarter" is another city mission for Thief 1, although I found it difficult in a few spots when I played it many years ago.
"Cult of the Resurrection" is a mission where Garrett has to search a secret cult's subterranean headquarter. Plays like some castle or mansion mission, but without windows to the outside.
"The Death of Garrett" ("DOG") starts in a cave, but turns into a mansion mission later on.
"Information" is another city-type mission with a castle-like part. You might need the correct CONVICT.OSM file to play it successfully, at least with Thief Gold. I heard it works flawlessly with the "non-gold" T1 version.
"Garrett's Revenge" is a nice city-type mission, although I could not finish it. I did not find enough loot.
"The Prodigal Corpse" is another mansion mission. It may be impossible to finish the mission on "Taffer" and "Thief" difficulty, but the easiest difficulty level does work.
"The Gem" is a city mission using the map from the original "Assassins" mission, but most of the map is not used (meaning it's not necessary to go there), and Garrett's tasks are few and rather simple. But it's nicely done. You might need a newer CONVICT.OSM, same as for the "Information" mission.
"The Odium" lets Garrett infiltrate a mansion-like building occupied by some Hammerite-resembling religious fanatics. Difficult, but worth playing.
I think that "Turning the Tables" was another mansion or castle mission, but I am not sure.

The Last Crusade I is a nice mansion romp too.
