Yes. It's funny you mention this now, because it was bothering me having the black bars on the edge. While the menus look nicer at that size, you can definately stretch them out to fit your monitor. I'm assuming it's doing this either because A.) You're using ddfix or B.) You're using NewDark.
If A, check ddfix.ini:

Remove the semicolon in front of MenuScreenAspect and make sure it says 0 there.
If B, find cam_ext.cfg:

I think it was this line. Again, remove semicolon in front of ui_scale_mode.

Therein lies a problem. I don't have the MenuScreenAspect line or any lines regarding menus in my DDFix configuration settings and I've also got Tafferpatcher installed, but removing the semicolon in the ui_scale_mode doesn't change my menus. Here is a screenshot of all the files and folders I have in my Thief 2 directory. (hopefully that helps)

I also want to add that the DDfix I have is the one that comes stock with Steam.

TFix only comes with TTLG.
steam version has DDFix, GOG is updated with NewDark+essential dml fixes. anyway, the menus were made for the 4:3 resolutions, and as they are static, and not generated dynamically/rendered, there are only two ways of displaying them without the black bars - either stretch them, or crop them. both are evil.
there has been a lengthy topic about this somewhere on the forum, search for it. the resolution was that you should not crop a banana with NewDark, if memory serves.
anyway, as you have patched up with TafferPatcher, the cam_ext solution is the one you are looking for. well, not really a solution, but to each his own.

That last part was a typo, it was meant to be DDfix. I couldn't find the thread you mentioned, but I will take a closer look at my files and see if anything else is preventing the change to widescreen.

I guess it's because you have a different version of ddfix without that setting. Also, I don't understand why you have ddfix if you're already using NewDark (with cam_ext), which you appear to be.
Also, sorry, I thought it was the ui_scale line, it's actually this (or a combination of them, don't remember):

Or at least, it was for me. I just tested it. I had put the semicolon there to stop it from putting the black lines.

Well DDfix came stock with this version of Thief and I never bothered to remove it before patching with Tafferpatcher. I'm not even 100% on what all I will have to remove to get rid of it. I will look into going back to stock, removing DDfix, taffpatching, and then changing that line in the cam_ext. Right now I'm rendering a video which makes my computer pretty much useless for anything else.
I'll edit this post with an update once I've done all that to let you know if the menu changes.
Tested and verified that doesn't work, looks like voodoo47 was right, banana.

Well it works for me so I don't know what the problem is, but you could try messing with the different display lines. You know, adding or removing semicolon next to them, saving, restarting thief. May also be because you've got ddfix in there too. I suggest disabling or removing ddfix, or do a fresh tafferpatcher install without ddfix.
