Self expression.
Self-expression by copying?

Riiiight, because there's never been any artwork that recreated something from real life.

Yes. What is being expressed, by the artist, is "I really like cathedrals! :D"

That and his skill used to build it. And his willingness to spend a lot of time on it.
Also it's hardly a copy and rather a translation into a different medium, specifically the context of minecraft in survival mode. I for one have never seen a quadratic sun shine through the windows of the original Notre Dame nor heard of Zombies roaming there at night. Though I may be wrong about the latter.

First of all, thanks to the OP for sharing. ;)
I feel like throwing some cents into the jar, so to speak.
Based on what you said Yakoob, art/entertainment is pointless by it's very nature. What's the benefit in creating art? Art doesn't make your life better, it doesn't help you pay your taxes, etc. etc.
The point is that art is there either for self expression as has been said, or to entertain others and bring them joy. [I'm probably simplifying that a bit, but for the sake of this discussion here...] So if the cathedral brought joy to someone, then it was worth the time and effort to make it. Also, the added benefit of posting it on youtube is that it is timeless. As is this very board I am writing on. (Provided that neither youtube nor this board ever go down, but that's besides the point. Even if it does, it might still be on the net thanks to web archive.)
Another thing, if the author decided to post it online for people to download, they could actually go and walk around near or inside it, so that makes it even more worthwhile.:)
Speaking about the idea of having a real world conversation regarding something you made in minecraft - I don't see why that can't/doesn't happen. In fact, I was just talking to someone about minecraft in real life today. Go figure. What you talk about is what you enjoy. So while I talk about minecraft, some other folks with different interests are talking about football. Is football and or minecraft any less benefitial or pointless than the other one? No. They are simply different forms of entertainment.
