I could totally go for a Minecraft-like game with variable sized boxes, ranging from the current 1m ones to the 1 pixel ones (voxels). I have no patience, desire or skill to build entire sculptures or houses out of tiny voxels, but I can see a lot of good potential for adding details here and there using smaller boxes while retaining the large ones for the overall scene.

No, you're never dealing with the voxels directly like that. (Edit: In Voxelfarm anyway. Maybe your imagined game could. Actually there is a Minecraft mod with variable box sizes, each step half the previous, down to 1/8 size or so IIRC.)
In VF, you wouldn't build an entire house out of tiny voxels. You'd place an entire wall down and then cut out the windows and door openings whole. Actually you'd use a building-grammar that procedurally builds the house (or its parts) for you in the style you want, to the dimensions you want, then cut and paste & mold chunks of it to tweak it how you like.
As for a statue, you could start with like a cylinder shape and mold it like clay a la zbrush. It's a lot more intuitive than box stacking IMO.
