Given what you can do with Minecraft I can't help but feel it's deserving of a project more imaginative than a large Pyramid and on a grander scaler than Baffords.

I was in the planning stages of a World Trade Center, with the goal of having it finished by Sept. 11 this year. Too much glass required, though.

None. Although, for quite some time i used (
http://www.minecraftforum.net/viewtopic.php?f=25&t=25676) dokus' texture pack - which i like very much (darker and less of angry-fruit-salad block design). Unfortunately, it is 32px texturepack - and my main building is out of brick. For spelunking time - it's just perfect :D
