I think it was definitely made in Creative mode then imported into Survival. You can't make glass in Survival mode.
Still incredibly impressive mind you.

There probably are ... but that is not needed anyway. You can always use just some editor (MCEdit for example). Also, there is a editor (don't remember the name) specially crafted to make that kind of architecture easily with a few clicks.

This looks way too interesting to pass on. One thing I am hesitant about though, the UI, is it how complicated? I don't really want to learn a complex system like some roguelikes have right now.

It's a really simple, un-intrusive UI, and nothing like a rogue-like at all.
What can be confusing is what makes what while crafting, and what some of the blocks you find are, thanks to the absence of tooltips (it took me ages to identify a clay block I had in my inventory).
But the wiki helps greatly there.
