Burricks, TDS Haunts and Zombies, Kurshoks, both types of treebeasts, something new and freaky... :D
I don't object to the others, I just don't find them interesting enough. But, heck ! They can all return, if the devs won't have problems rendering them. I'd love to see their re-vamped versions... :)
Wait a minute...
Where are the Craymen (the usual kind) and Gammall's stony pals ? :(
P.S. In retrospect, maybe I should have voted all...

Actually, now that I think of it, aside from the cute little burricks, I love elementals too! And I think there could be more kinds of them, not just fire! They sort of give the Thief atmosphere an entirely new perspective, when they're present I mean. So yeah.. elementals for the win!

Yes! I wonder what earth & water elementals would look like in the Thief universe.
Also, fire shadows. They don't seem to be a particularly popular option, but I loved them. They started out simply as a way to give an unlimited source of fire arrows near fire puzzles, but rather than going for some bland, simple solution the LGS team made a very creative and interesting (IMO) NPC.

Burricks of course. But I ever disliked frogbeasts (mines are better) and those eyeplants (they gave me the willies).

I didn't include the yellow craymen because of the maximum 20 choices limit.
I also didn't include the statues because I thought that everyone else also thought that they were so incredibly lame and boring that no-one would remember them.

A little speculation : Do you think the Pagan visps and the elementals are related in some way ?

The wisps were more ethereal since they were impossible to kill or disintegrate and they didn't respond to any material threats, or other outside interference at all. The elementals can be "nullified" using their opposite elements and they can also be disintegrated using material weapons.
