I have to go with Trail of Blood from Thief 2.

that is actually my second favourite mission. i agree that the forests atmosphere in this level and the ambient sounds are extremely well realised. also those damn trees! walking up to one on my first play because of a strange sound emmiting from it, just to have the bastard start legging it towards me trying to rip me to shreds.... it shook me up lol
