Here are some of my favourites (most of them have already been mentioned, like the Horn of Quintus, or TDP's ending movie):
Thief Gold:
SFX/M05LOOP3 - Can't remember where it featured in the original mission, but it was used in the streets of the FM Just for Show. Adds a lot to the atmosphere.
SFX/VFEEDUS, VHEARME, VHUNGRY, VNEEDYOU - Shivers run down my spine everytime I hear these distorted voices.
SFX/toilet - "It's a multipurpose throne room!" :joke:
Thief 2:
SFX/L7_treeL - No idea where it is used in the OMs, but this sound is really creepy. Like a female choir with strange bird sounds in between.
SFX/brassL - Second creepiest sound in T2. Can be heard in the Mechanist lab in Eavesdropping.

The Horn of Quintus along with the Halls of Echoing Repose were nice, but my favorite would have to be the little music box in S&R.

Like so many others here, my favorite from T1 is the Horn of Quintus music. For T2, it's a bit hard to say... I really like the ambient music in the first level, though I can't remember the name of the level right now.

A chill runs down her spine after finishing Thief Gold for the first time. The very last movie to watch, Garrett is cloaked against the cold winters night, listening to the music at the very ending, almost sends a triumphunt swill of joy, at the sametime, a touch of sadness, knowing, (at least back then) there was no more, no more challenges, no more missions!! OH GOD! <small> ok ok I am better, ye of little faith! Boy was I wrong, ha</small>
The ending music, in Thief Gold, is captivating as hell, I was mesmerized. Love that piece. It was used again, in one of the briefings for CL. Very cool, very nice. :thumb:

This might be something that was already discussed, but I couldn't find anything about it in older threads. Sorry if this is already known to everybody:
As you might know, I'm currently busy playing the US version of Thief 2, and I noticed something quite strange: The differences between the German and the English version do include more than just the voices. Some of the ambients got changed, and I have no idea why. Here are the ones I've noticed so far:
The music cylinder in Shipping & Receiving plays a harp tune in the US version. In the German version you can hear a section of the tune that's played during the credits movie (which in the US version doesn't seem to have any sound at all).
When entering those number codes in S&R, the odometer clicks when its digits are turning, and when the player entered a correct combination, it goes "Pling" like a cash register. US version: silence.
The pagan music played in Trail of Blood is totally different, as well. US version: swelling tones, the soundfile Duodecimal put online some posts above. German version: a sad lute tune :confused:
MiscVOs/[german or english/]WingedM.wav. That's the "singing monks" sound sometimes played near mechanists statues, IIRC. Again, the German version features a part of the tune played in the credits movie. The US version plays a very creepy choir that's near to screaming :weird:
Are those differences only in the German and the English version? Or are there several English releases that have different soundfiles, as well?

Okay, I checked the soundfiles in snd.crf - all the wavs in MiscVOs were changed, even those without anything language-specific. s0401.wav to s0407end.wav sound totally different, as well: Eerie tones in US version, headbanging rockband in the German release... huh!?

the best is definately the one played in ramirez's mansion in thief: tdp
but the one in trial of blood is sweet too. it caused my woofer to shake up though. heh

For me the music in Thief was one of the most vital ingredients. I personally think that without the great music or sound effects Thief would be "okay", but not great.
I concur on the Horn Of Quintus music. It suited the level absolutely perfectly and kudos to Eric Brosius for coming up with that ( and the sound in general ! ) The Horn is simultaneously melancholy and sinister, and the moment in the tunnel where you first hear the faintest hint of it is one of my most memorable moments in Thief.
I also really liked the music in The Tower Of Air in Mages Tower. Very ethereal and , erm, "airy". I suppose that's why Eric Brosius got paid.
I didn't really like the stupid nervous sounding cymbal type in Thieve's Guild though.
BTW I also like some of the original music in some of the fan missions.:thumb:
