A couple of space games spring to mind...
Firstly, "Sinistar Unleashed" is now 10 years old, and it looks quite extraordinary for its age.
Secondly, "I-War 2: Edge of Chaos" (which is only a couple of years younger than SU) remains one of the most beautiful space sims around.
Both games were graphical wonders at the time, and are still holding up incredibly well. Of course, a game set mostly in void gives you a lot of scope to make what is there look really nice, but that's beside the point :)
Oh, and I've been playing TRON 2.0 recently, and it looks great (thanks, as with some other examples, to a highly-stylised look).

Yeah, I have I-War 2 installed on my other pc. It very much holds up today.

I was kind of impressed with how well Dark Forces looked these days. Those sprites sure had some detail.

Thirding Homeworld 2. Sure I got bored of it and never finished but damn did it looks great. It isn't really old though.
I think Outcast looks great. Never owned it though, mainly because I cannot find the DVD version :(

Splinter Cell 1 was another with what I thought were amazing graphics. Double agent for X360 was just amazing.

I never played MDK2 but it's still on the wish list.

i got the steam jedi pack and replayed:
dark forces1
jedi outcast
jedi academy
the last days, Outcast is still an ace game with good-looking graphics and insanely big, sprawling levels featuring clunky old-school jedi parkour (aka random jumping hoping there aint a noclip where you land) that would make Faith of MirrorsEdge blush and run home to mommy.
