In Thieves Guild when a thief says: "I shouldn't even be here... I should be... I should be in a game or something." I always loved the irony in this statement and want to reply to him "You ARE in a game".
Also when a frustrated guard yells out as I climb a ladder "Ahhh you're making me SO MAD!"

One of my favorites: Thief 3 - Run around a corner and surprise a guard and he jumps back and yells: "Hell's Bells!"
Thief 1 Hammer: All of the Hammer Ranting! But especially: "Vigilance is the shield...to an Enlighten Future"
Thief 1 Guard: "When are they going to bring me my dinner, that's what I want to know...(short time later)... down here in the cold and the dark and the damp..."
Haunt: "Join us, Join us, Join us NOW!"
Not really a rant, but the guard whistles. After 17 years of playing, I find myself everyday whistling some of those tunes lol

Some of my favorite non verbal things were when the guards and hammerites whistle or sing to themselves. I love the kind of operatic hammerite "Mau da da da dum" or Ramirez's whistle when he's pacing his basement.
Some of my favorite lines are from TG when Raul sings; if you hang back for a bit, you can hear him mutter and sing all sorts of things to himself. For example, "Oh yes that is very good isn't it? Hmm hmm hmm yes, aha, yes. Hum hum humm...", and "Oh you won't hear Rodrigo hit those low notes, oh on no, not him, ahh haha hmm, hmm", also "I'm telling a terrible story, but it won't diminish my glory, for they would have taken my ugh... Oh and I can't remember the rest of the words, it's been so long!"
It's all hilarious, must have been loads of fun to voice act that part! Raul is the rambling-est rambler who ever rambled.
