Personally speaking, the most important extra dimension apart from "easy > hard" would be "no loot > all loot" ... quite often I want a more difficult sneaking experience without having to comb the entire mission for loot.
So along with the violence dimension, that would mean I'd like at least three dimensions ... and we could probably think of more (number of guards alerted sounds good!).
The trouble with making these extra dimensions part of the mandatory set of objectives, is that they would probably want to playtest all combinations of mandatory objectives (because otherwise the player could choose a combination of objectives at the start of the level which would turn out to make the level almost impossible to complete). If so, the amount of playtesting would blow out as they add more options.
There is something to be said for acheivments (or optional objectives, if you prefer) ... you still get concrete feedback about how you went achieving some specific goal, but there's not so much pressure on EM to make sure it's impossible to choose a combination of objectives that will make the level too hard, because the player can always choose to give up on one of the optional objectives half-way through the level.

Make it as close as possible to Thief 1's atmosphere and gameplay in a modern engine. That's the best I'd like to see.

On my part, I really don't want a copy/paste of the first two Thief games. Those games are too much fun to describe, but I don't want to get Thief 4 just to play it over again.
For how hard everyone is on TDS, it did have it's nice points. Perhaps a mesh would be better to give every player, including the people who have only played TDS, a chance to have fun.
