Bethesda are awesome when they actually put their energy into full-blown expansion type content instead of crappy DLC's. Bloodmoon, Shivering Isles, and Point Lookout are all fantastic imho.

Thirding Gothic 2: The Night of the Raven (though I bought the Gold version and never played the game without it, but it integrates so well that it's hard to see the seams.)
Starcraft: Brood War.
Shivering Isles for Oblivion.
I wonder if all the Dawn of War games (Winter Assault, Dark Crusade, Soulstorm) count as expansion packs? They're memorable enough, even if the original game was the only one with a decent singleplayer plot.
