I have to go for Gold, maybe just because I had it longer.
The Thieves' Guild was a strange mix of tunnel and maze-like structures. Overall, it was interesting, but the music put off the atmosphere.
Song of the Caverns had enough humor in it to win me over, and I loved the music
As for Mage Towers... I'm kind of on both sides of it. I thought those mages' weird voices added a little something to the game, and I like walking into a wall of water and that sort of thing. However, I didn't like the parts where it tried to be something kind of like a platform game.
I really liked the fire guy as an idea, as it was an interesting one. He scared me too much to really get that close, though...
Little Big World, anyway, pretty much decided it for me. That place was made of win :D

You do realise that the question was how the additional content in Thief Gold compared to the original Thief: The Dark Project?
The question was not how Thief Gold as a whole compared to Thief: The Dark Project.
In other words, how to missions like Thieves' Guild, Mage Towers and Song of the Caverns compare to the original missions such as Lord Bafford's Manor, Assassins or Return the Cathedral.
(Though Thief Gold's additional content also includes things such as the fireshadows, and the mages in the Lost City).
