Fans have created more gods than just the Trickster, but that's fanfiction.
Mansion of Chaos (Fan Mission) and Correspondence of Thieves (Fan Novel) as the 2 examples I can remember (or know of).

Other deities are referenced, but no others specific to the Pagans. The precursor gods and the Builder for example.
