Ive gone onto Amazon.com (the Builder's sanctuary for all things, at great prices!) and found a rather cheap 2Gig usb thumbdrive that, reportedly, works rather well. I was wondering if I could play Thief 2 from a thumbdrive on any computer capable of playing it. I know I'd have to edit DARKINST.cfg every time I want to play to reflect the new drive letter of the drive, but that can be easily taken care of. Has anyone else tried this, and if so, what problems, if any, did you encounter that can help me? I wanna be able to play Thief 2 from anywhere, and this seems like a good solution so I dont have to install it on EVERY computer I wanna play it on.

But, wouldn't it still have to be installed on whatever computer you play it on? (Windows registry and all that)

No. I have a T2 install folder on my laptop that I simply copied over from a desktop PC via a thumbdrive and it works fine. However, I've never tried actually playing it off the thumbdrive. I don't know how well it will work from a performance standpoint, might suck over USB 1.1, but work OK on USB 2.0.

The only registry keys that Thief 1/2 and SS2 set concern where the program is located for patching and uninstallation, so the registry is essentially irrelevant to getting the programs to run. In fact I've run Dromed and Thief II game-mode from another computer over a network, with no ill effects.
Running it off a USB drive would require patching the game before copying it, and editing darkinst.cfg to set the paths appropriately. Darkinst.cfg does not need actual drive letters or any absolute path. Simply using ".\" in place of "D:\Path\To\Thief2\" works just fine, and makes the game completely portable with no further modifications needed.

OK, wait, let's back up...Portable Thief for Dummies.
I pop in the Thief 2 (or Thief 1) CDs and install it to the flashdrive? Then run the patch from the installation folder?
When playing the game, it always asks for the CD--no way around that?

There's no-CD cracks. And no, we're not going to link you to them.
You would be better off installing it to the hard drive first, then patching it, then cracking it and editing the darkinst.cfg, then finally copying it to the thumbdrive. It will be faster and less wear and tear on your thumbdrive.
