if i edit the OM files in the dromed folder will the OMs still be the same when i play Thief 2 and not the edited files?

As long as the edited OM files are not in your Thief2 directory where the main game files are,you are okay. I usually place my editing files in C:/games, that leaves the Thief2 directory with the original Thief2 om files intact and undisturbed.
If you want to rename your om edited files to miss20.mis, or just save as a .cow, you can keep them in your Thief2 directory without any trouble. Most of the builders use a T2 directory for building and a Thief2 directory for the original game.
You can clone your Thief2 directory, name it T2, and use dromed to create the path when building. As long as the path exists and the path is no longer than 16 characters long. I did this once, then reverted, as I always forgot near the end of the building process. I just save .cows (miss &gam) to the Thief2 directory. At beta time, I save the .cow as missxx.mis and also save .gam, keeping my backup files in C:/games, along with all of my resources.
