Big O

Big O, Death Note and Serial Experiments Lain are my suggestions. If you end up watching Death Note, be aware that while it gets remarkably boring after the halfway point, the last episode is totally worth it.

Hated Big O and a lot of that is because of giant robots. The first episode had me enthralled. Then boom, giant robot and I deleted the entire series.
NGE's the only shit I'll accept giant robots in and that's because it's a deconstruction. Well, that and a terrifying look into the mind of an insane animation director working out his mommy issues through religious symbolism.

Two really good ones that nobody has mentioned yet:
(
http://en.wikipedia.org/wiki/Monster_(anime)) Monster . Very well done psychological drama about a doctor in Europe who goes on the trail of a serial killer whose life he previously saved. Much more serious and low-key than most anime, and with top notch characters and writing. Does drag a bit towards the end though.
(
http://en.wikipedia.org/wiki/Haibane_renmei) Haibane Renmei . Totally the opposite of Monster; a beautiful anime about a group of angel-like children who live in a walled-off town. Starts off a bit mawkish, but gets into some deep territory later on.

You can just watch the episode *until* the robots show up then skip to the last few minutes. They all follow that same blueprint. It's a good show without them.

Do try to point out similar styles, forms or contents in both Grave of the Fireflies and Naruto.
15 seconds on google image search confirms that both titles look quite distinctly like anime.

Actually it drags throughout the 80 episode series. I love the series, I love the concept, but I've never been able to get through more than 30 episodes or so.

Anime is a genre
While I'm hesitant to play the Cockfight with Koki game, I should point out that this is far from being a given, and certainly wasn't the framing used in a (really excellent) anime/manga class I took.
Without getting too complicated, 99% of the time anime = Japanese animation. While there are genres distinct to anime, and the result of being the product of one culture and its market forces means that a lot of anime are very similar, it's really just a medium (animation) plus a national/cultural origin (Japan). The noir analogy does not hold.

Wow, all these posts and not one single mention of Rurouni Kenshin (or Samurai X if your in the US). This BY FAR is the best anime that I've had the pleasure of watching.
Note that of the 3 seasons of the show the first 2 are excellent, whilst the 3rd is full of "filler" content and as such are more meh. First 2 seasons though, top notch. If you choose to watch this, be sure to watch the 1st of the 3 movies of the show as it came out prior to the tv show and sets the scene for it. The other 2 movies are set afterwards.
Outstanding anime.
The "Arc The Lad" anime (which in itself is based off the 2nd game in the PlayStation 1 RPG series) is pretty damn good also.

Boogiepop Phantom (excellent but you might want to read the novels first as the narrative jumps around quite a bit)
Spiral
Texhnolyze
Serial Experiment Lain
Kino's Journey
Le Chevalier d'Eon
Gankutsuou: The Count of Monte Cristo
Azumanga Daio
Honey and Clover

On the other hand, skipping the giant robot sequences in a series that's
named after one of them is profoundly retarded. Especially when they start to become a significant part of the story arc. Really, any red-blooded male human who hates giant robots, hates himself.
As for me recommed some Animes, I'm going to go with (
http://www.youtube.com/watch?v=54srZLuYfb0) The Legend of Korra, the sequel to Avatar: The Last Airbender. Yes, it's not strictly anime, but it's so anime-looking and eastern-themed that it may as well be. Anyway, I've seen the first two episodes (they were up for free on the promo site for a weekend, now rehosted everywhere), and I'm already hooked, even though I never watched the original series. Can't wait for it to start next week.
