Barring Thief DS, I haven't touched any of the original Thief games in about 8 years. However, they are still my favorite games of all time.
Anyway, I was considering finding a copy of Thief Gold (still have my copy of DP, but have never played the Gold version), updating it with whatever new third-party enhancements have been made (textures, objects, lighting, etc.) and giving it a whirl.
I see that there are several enhancements currently in the works, and even a reworking of the original engine. For those of you who are familiar, I was wondering if there is enough out there now to update it in the way in which System Shock 2 was updated some years back (with brought the game's graphics from 1999 up to 2004). I also see that, although objects have been updated, the improved high-res texture packs are still being worked on and are exculsive to Thief 2 (any plans to implement this for TG?). Furthermore, the engine reworking with enhanced lighting and such would appear to be many months from completion.
So, is Thief Gold something which can be fairly comprehensively updated given the currently available third-party graphics and sound upgrades? Or would you recommend waiting another year or so for all these updates to be better developed and implemented?

Yes, I have. It would seem, however, that these mods are really intended to bring Thief I up to speed with Thief II in regards to textures.
On that note, going back to my original question, is there anything in the works currently past Alpha stage that would endow Thief Gold with more modern, high-resolution textures?

Not that I know of. The OpenDarkEngine project will not in and of itself upgrade anything, it only gives us an open source engine that has many barriers removed and allows for the user of higher quality textures etc. Your best bet is Nameless Voice's Enhancement Pack (which upgrades many T1 objects) and one of the older AI upgrade packs, like Orgy's or Daemonite's.

I say you can jump right in tomorrow. I started playing again during Christmas. It's a hoot. See also the 2008 Thief Still Rocks... thread.
The Thief Enhancement Pack is quite fabulous overall. It's recommended in its current state.
The Sound Enhancement Pack I didn't get to test as thoroughly as I wanted; At one point I needed to uninstall it, and I was eager to get into the game, so I forgot to re-enable it.
Daemonite's texture upgrade is nice, and I only encountered one buggy and one misaligned texture with it.
The renderer (or rather, the texture mapper) of Dark makes it virtually impossible to do much with the world graphics, unfortunately. I don't know whether the openDarkEngine will be able to remedy that, or even when the engine is going to be available.
Lastly, the earlier you begin playing, the earlier you can dive into the sea of FMs.

The problem with upgrading the textures is that, even if you recreated all the textures at double the resolution, you'd then have to go back through every single mission file and lower the texture scale size and realign the textures on every single face of every single brush. Which would be the opposite of fun.
