Seriously though, I wonder what the specific, real difference is. Like I said, in Taiwan I had this Buddhist chicken which was 100% veggie. It had skin on it and the "meat" was striated like real chicken. It was tasty, obviously of a tofu base but with meaty "feel" to it and slightly sweet.
It most certainly wasn't meat though and I can't explain why. I
know it wasn't meat because it was in one of the hard-core Buddhist places the monks go to eat and they'd flip out if they were found to have been duped, I'm sure.
Odd that I can't put my finger on what was un-meatish about it. I reckon it's some neurobiological nuance, like nature just telling me "oh hell no don't think that be
real meat, yo". And it's for this reason that I find meat eating just... natural. I eat a lot of non-meat stuff and by that I mean vegetables not bread, rice or pasta. In fact I often eat just meat and veg and so I make a lot of effort to get them right. This is also why I'm not
that keen on sandwiches with masses of bread; it's all about the filling.

Looks like a really labor-intensive way to make what's essentially a cheesesteak.... without cheese.

Damn it. I have some weird genetic defect that makes philly cheese steaks irresistible. Off to the store for some hoagie rolls, steak-ums, and cheez whiz.

I'd love a recipe for a cheesesteak, I've heard of them but never had one.
And the most labour intense part of that was dicing the shallots and mushrooms. The rest was easy, just frying the mushroom mix and the steaks. I made it at 6.30pm and opened it at 9am the next day.
The hardest part was the waiting. :p
Edit - having looked up cheesesteak recipes I'm pretty sure this is nothing like it. It's much more like a beef wellington.
