Give me my ham or turkey sandwiches (made from Sunday's leftover spiral ham or sliced from the corner deli's smoked turkey breast) any day. But for a change of pace I really love an open-faced sandwich of freshly baked French bread slices topped with beef tips in gravy. LOTS of gravy.
Needless to say, the latter requires a knife and fork.

Well, I prefer them closed, but with the caveat that the bread must be thin for me to really enjoy it. I can't STAND subway-type preparations where the bread is several times as thick(each side, at that) as the actual contents of the sub.
If I can't get them made that way I tend to pick down the amount of bread to where it is an open "sandwich".
Best of all, though, is to take a high quality roll, scoop out the center, and put your own stuffings in the center before grilling that. The end result is fantastic.
On a side note that picture of the mozzarella-tomato sandwich looks fantastic. The best sandwich I've ever eaten was pretty close to that, one I bought while traveling through Romania on business.

Nah but seriously, it'd be "closed" for me. Open ones have their place but they're not sandwiches. And well-done, traditional sandwiches is just much more balanced both physically and nutritionally.
