Only one that comes to mind would be Dead Space. Didn't like the demo, yet when it showed up cheap in a Steam sale I picked it up due to the overwhelmingly good reponse it had gotten from gamers. Ended up enjoying it a lot.

Oh, I've had a few:
Metro 2033 - kinda like Angel Dust, I tried it around its release (on easy) and while I liked the atmosphere and the setting, the gameplay didn't impress me. I bought it later during a steam sale, because people kept saying how the Ranger difficulty is better and how stealth is decent in it, and it turned out to be true.
I ended up putting 20 hours into it (which is not bad since the main story is only, like, 7 hours), playing it on Ranger Easy and doing the more interesting achievements.
Thief, System Shock 2 - it's not that I didn't like them the first time, it's that I was scared shitless of them. :) I gave up Thief on the Haunted Cathedral mission and SS2 around when you come across the friggin monkeys. Only after I played Thief 2 I went back to TDP and subsequently SS2, and of course, ended up loving them.
Fallout 3 - tried it at release and basically nothing about it clicked for me. Didn't like world, the combat, nothing. Then this summer I felt like playing something which has lots of exploration potential and bought it during the steam sale. Well, it did have lots of exploration and so much more - I ended wondering how the hell did I miss this awesome game.
Mass Effect - once again trying it out after release didn't quite convince me. I liked how dialogues were coreographed and not just characters standing and talking, but that was about it. The rpg-action hybrid combat system was weird, I didn't like how you don't choose what exactly you say, and it was a space opera with a 'save the world/galaxy' theme, none of which I particularly like. A few years later I came across a youtube video titled "Commander Shepard is still a jerk" and, I'm not kidding, that made me give the series another try. :) The result? Since then I played the entire trilogy four times.

I'm going to have to throw Stalker: Shadow of Chernobyl in here. I think I bought it when it was new and barely got past the very first mission where you are sent to rescue some chap from a nearby garage. It didn't feel right, I couldn't get it. It took a change in perspective from reading other folk's opinions of it for me to give a shot and become truly immersed in it. And of course, spend a little time finding the perfect combination of mods!
To this day I've still never completed it - I like to make it difficult, play slowly to soak in the atmosphere, take my time doing plenty of sidequests and exploration, only play it alone and at night for long periods where I won't be disturbed. I usually succumb to broken saves, or go too long without playing and decide to start from scratch. Don't get tired of it though.

If you count demos, then Deus Ex, which was completely unimpressive and took multiple people telling me to go buy the thing before I went and bought the thing and played it.
I thought the Infinity Engine games were terrible until a few years ago. When they came out I didn't see the point in playing a 2-D isometric game when we were getting flooded with shit like Thief/SS2/DX, but in retrospect I should have probably at least given Planescape and Icewind Dale a chance back then.
Edit: Oh yeah, and Shadow of Chernobyl too. "Here, take the shittiest gun imaginable and go kill a pile of guys. Also, the stealth is barely functional. Good luck."

For me it was Anachronox. The first hour takes place in a rather bleak environment, and the game only really gets going when you finally get off the planet. I played it for a while, didn't particularly like the combat system, and put it aside for a month or two. Then I started a replay, got to Sender Station, and very soon I was hooked. It's unfortunate the start is so bleak (albeit the witty dialog makes up for it), I think this likely discouraged a lot of people who'd have enjoyed the rest of the game much more.

Another for Stalker. I played it, died a lot and thought "FUCK THIS SHIT" and shelved it, then read a lot of hype on here and decided to go back to it. Got to Rostok and everything just clicked into place. It is now quite possibly my number one game.

I kept hearing how the game took forever to get going, and how the post-release patches had even added some kind of fast taxi service to circumvent the awful tedium of getting around on foot, so I was kinda expecting the worst when I started playing Anachronox, but happy to know that I had the taxis available to save me from some of the annoyance.
As it happened, I got through that section without getting in any way bored, or ever feeling the need to even find out how the taxis worked. I mean, nothing was very far away from anything else, so I couldn't even figure out why they were added?
I guess maybe the start is more annoying on repeat plays? Maybe? But when I played it I was really left wondering what the fuss was about.
It's a nice game. I really must get back to it sometime.

Dark Chronicle - Lost interest halfway through the game on my first play through. A replay of the game many years later fixed that.
GTA SA - I loved this when I started playing it but then fell out of it once I got to the flying missions. Took a replay last year to regain my love for it.
GTA 4 - I played through this game nearly to the end on PS3 a few years ago before losing interest. I've tried playing it again a few times but just can't get into it, as I prefer GTA SA and Vice City's style more. I owe this game another chance at some point.
