Okay, bringing it all together, leaving little out, this is what we see, which isn't the whole story, of course:

Fish are definitely used in a lot of marinades, like Worcestershire and A1 sauces and Fish sauces, but we don't see any vegetables or fruit, like tomatoes and tamarind, around Mynell's place. Still doesn't mean anything, but the best we can guess would be along the lines of "What did MikeC want us to think the recipe was?" If I redesigned the level, pretending I knew what was going on here, I'd have Garrett either not say anything until the player read the recipe, or just mutter "Eewww", without the "So that's Mynell's secret ingredient." Since he calls the Huge Spider in the cell on the first level Mynell's secret ingredient, singular, unless the player approaches the freezer first, I have to believe the monkeys, fish, and deer are not the gross items, though he never touches monkey heads or frozen fish in the games. :p

I forgot all about the deer legs...
My bet, then, is it's venison steaks flavored with spiders...or maybe it's monkey meat flavored with spiders, & the deer is Mynell's personal protein preference.
Even on a giant spider (& we all know how big the spiders can get in Thief), I can't imagine enough meat from a spider that I'd consider it a steak.

Actually, the meat Mynell serves is marinated in a solution of spider venom and alcohol! That's the secret. Even giant spiders don't have any solid portions from which to carve steaks and roasts.
