NOLF almost pulled it off. You would see your legs and arms when you fell over dead. I think it would be too distracting though normally. Think about how much of yourself IRL you can see when walking straight ahead. It would make the screen too cluttered.

One thing I had noticed in training was that, even though I had my legs shot off completely, when I looked down onto the reflective glass-like floor, the standard image of JC with legs was shown. Weird.

That's just like in MP. You just duck when you lose your legs. Did you expect to be dragging them behind you? yeah right. As far as being able to see your legs in first person: It's a lot of trouble for too little gain.

Well - you see yourself in the mirrors - so that means that JC is actually being animated. I think they should just add your legs, when you look down you see your legs. It would be cool.
