Yeah, I kind of took it as more of a bum/vagabond/homeless type person who gathers and picks up things, as opposed to someone who is breaking into houses and stealing valuables. Here's some other definitions I found:
4. One who compulsively collects or hoards small objects.
and
2. Someone who collects things that have been discarded by others

the lady came from Baltimore
all she wore was lace
she didn't know that I was poor
she never saw my face
CH: I was sent to steal her money
take her rings and run
but I fell in love with the lady
came away with none
the lady's name was Suzanne Moore
her daddy read her law
she didn't know that I was poor
lived outside the law
Her daddy said I was a thief,
And Didn't marry her for love,
But.............
There is more, but this old tune from the 50's Lady came from Baltimore, the best known version is by Joan Baez.

What about Leonard Cohen's Basso's "Famous Blue Raincoat"?
Jen came by with a lock of your hair.... one more thin gypsie thief...

Whiskey in a Jar O' by Thin Lizzy
...
I took all of his money,
and it was a pretty penny
I took all of his money and I brought it home to Molly...
I doesn't say 'thief' but taking someone's money...might as well :)
Good to see the thread revived.

If it's just anything about thieves, then:
The Ballad of Jesse James: Traditional ballad
Jesse James was a man who
Roamed through the land,
He robbed the Glendale train....
Me and my uncle/West Texas plains (the Greatful Dead and others)
...And in the confusion, my uncle stole the gold.
Henry Martin Traditional ballad
...Who should turn robber all on the salt sea.
Captain Kidd Traditional ballad
The low land sea Traditional ballad
All have referrence to robbing or thievery on land and the highseas.

I had forgotten. My band has a song with thief in it.
"Mary Brown"
There's a road that runs along the river bed
Somewhere down in Louisiana
Where they say years ago that the water ran red
With the blood of a cheatin' man
Mary Brown was driving home one night and came across her lover's car
He was there with a woman
It was plain to see that he had taken things too far
And she knew that it wasn't the first time
And swore that it would never happen again
And with fire in her eyes she swore tonight to bring the pain to an end
She took a loaded gun from the front seat and put the lovers in her sights
She never heard a single word they said as they were beggin' for their lives
She shot 'em down
They say Mary took the bodies and drug them down to the river one by one
And she sank them to the bottom before the rising of the sun
She drove back home and locked herself inside with just a match and gasoline
And she set fire to the only thing that she had ever called a dream
They searched for hours among the ashes on the ground
And the strangest thing is that her body was never found
Life can change in the blink of an eye
Love is an illusion hidden in a lie
It can build you up or it can break you down
Like in the case of Mary Brown
It came like a thief in the night and stole everything from her she'd ever dreamed of
And that's the last anybody saw of Mary Brown
Years went by and every now and then people talked amongst themselves
In quite little whispers they recalled the haunting tale of the night love betrayed the heart of a woman and took her very soul
And the missing of three bodies...where they are well no one knows
And late at night somewhere around the river bend...you can still hear Mary crying in the whispers on the wind
Life can change in the blink of an eye...(etc.)
mp3 here....

How about this one?
Anathema - "Leave No Trace" (from A Fine Day To Exit, which is a fine album at that!)
born to the glare of the senses
spoon fed reality infused
a new inherent
passive contentment
you are so easily amused
here and now
we are gone in a heartbeat
a dream in the
passage your time
chances are failing
this world isn't waiting
the moment is passing you by
questions lie beneath the surface
the fools are fooled once again
benign coincidence
we stole our existence
and gladly cast it to the wind
here and now
we are gone in a heartbeat
a dream in the passage of time
chances are failing
this world isn't waiting
the moment is passing you by
slowly spinning on the wind back home
I dunno, figured it fit.

I've always wondered if there was already a kind of what-music-do-you-associate-with-Thief thread. I think people tend to find thievy parts in whatever music they like and I believe this is part of what happens here.
