I indeed have played Gothic 1 and 2 and I enjoyed them very much. In fact as I wrote what you have quoted above I immediatly thought whether those games would prove my impression wrong. But I think they don't. The world of Gothic is open only as far as the story allows. There are places where you simply cannot go before you have reached certain events in the timeline. So Piranha Bytes - for the sake of the story - wisely decided to restrict the freedom of the player. Their world is not as open as it seems...
I have not played Gothic 3 but from what I have read and heard about it they gave up on this principle of subtle restriction. First result: a free world - and an awful lot complaints about a weak story in that game. Second result: For their next title Piranha Bytes promises the reintroduction of chapters to regain the possibility of changing the world midway or unlocking new places for the player. In other words: They again sacrifice some freedom for the sake of the story. And to me that's an exciting perspective :-)
