I played Psychonauts with the steam controller and I thought it was fantastic, but I'm not a controller afishionado. I used the default controls I think for the most part but I liked having some of the powers having duplicate triggers and being able to control the camera with the right touchpad (only thing I used it for) was nice, made me feel like I had a controller and keyboard both.

Just turn on joystick in the settings in Thief. It's got analog movement support already.

Hm. Weird. Just double checked and Thief will see my Xbox 360 controller as a joystick no problem, but it won't see the Steam Controller as one. Must have something to do with how the Windows Device Manager only sees it as a mouse and keyboard.

Is there an ideal game to use the controller for? I feel I should give it a decent chance with a game which it's great for.

Just about every game works well with it, once you're used to it. So instead of looking for the perfect game, think of it more like a training exercise.
Slower first person games would be the best way to acclimate yourself to it, like The Vanishing of Ethan Carter, Outlast, or Town of Light. Once you get a feel for it there, you can move onto faster, but still not super twitchy games, like Thief, Dishonored, MGS5, Witcher 3, or Dark Souls 2/3.
Throw in a bit of Serious Sam or Doom into the mix during the interim, kind of a gauge to see how much better you're getting with it.

So how did my SC-controlled GTA Online session with Thirith go?
I started up the game, and the left thumbstick was acting as a dpad for some reason even though I'd set up the controls for it yesterday, and rather than subjecting Thirith to waiting for me to figure out how to fix it I switched back to the 360 pad. THE END
Ok, I did play a bit of GTA V singleplayer with it yesterday tho! I was pleasantly suprised to see that it found community bindings for me even though I launched it as a Non-Steam game, but besides that I have few good things to say about it. It was pretty wonky and I even had to switch back to using the mouse for a few sniping sections. That touchpad is no substitute for aiming with a mouse. At the moment I can't even really say it's a good substitute to aiming with a thumbstick. Perhaps it's possible to get used to this thing with enough practice but I'm not sure I'm prepared to put in the work. That's what using it feels like, work. My patience with <strike>this goddamn thing</strike> the SC is seriously wearing thing. Ok ok I'm gonna stop now before I make Renz cry.
