I keep trying to explain how great the game is to my friends who don't play, has anyone posted a short story of the details of the game anywhere that I could give my friends to read?

You can tell them it's a cross of "The X Files" (before the show sucked) and "Robocop" (if it didnt suck).

The best way to hook someone into the DE experience would be to show them the game, but beyond that there's probably little you can do. Giving them a synopsis of the story to read would certainly ruin the game, though.
Are these potential converts already gamers? If so, what other games do they play? If they're traditional RPG fans, they might not like DE's action elements; taking someone who isn't a gamer or who's never played a FPS and throwing them cold into the world of Deus Ex might not be the best route to take. You never know, though.
Personally, Deus Ex seemed like a point of natural progression for me. After Wolf3D, Doom, the Quakes, Duke, Thief, Half-Life, and SS2 etc., DE was the next step. (Somehow I managed to miss Daikatana until recently, when I found it in the bargain rack for $2.99. Still got ripped off...) Anyway, I can't use my experience to help you hook someone into the game who isn't already ripe for the experience. I've tried to get other people hooked into SS2 the same way, and it invariably ends in disappointment. Either they don't get it, or they let some some minor flaw turn them off, or whatever. This has already caused the demise of one serious relationship, so I've stopped recommending games to people I care about.
