I'm savouring it and playing it maybe once or twice a week, and trying to get as much as possible out of each kingdom before moving on. I'm currently on the Luncheon Kingdom, so not far to go.

I'd almost argue that the best way to play the game is to go on a quick world tour, tearing through each kingdom to get to the end, then revisiting them afterwards to explore them deeply. Considering how much of the game opens up after you beat it, this makes the most sense to me.

Mmm, yeah. I wasn't exactly in a rush, did get more moons in every Kingdom than I needed to progress, but since I knew the game isn't over after you beat the boss I didn't feel any compulsion to explore every nook and cranny in the first go-round either.

I played it about the same way. I didn't rush exactly, I explored a good bit, but since I knew that the traditional beginning to end story was only a small part of the entire game, I didn't spend hours upon hours savoring each kingdom. By the time I beat it, I was just shy of having enough moons to go to the Dark Side of the Moon, which is roughly double what you need to actually beat it.
edit: It's a lot like Mario 64 in a way, just that much more extreme. You can beat it with just 70 stars, and those last 50 remaining are usually the most difficult of the bunch to get or find, meaning you're only about 1/3rd of the way through the game.

I pretty much just moved on each time I had enough moons to power the Odyssey. I wanted to see all the kingdoms ASAP and I figured with a game like this, there's no way they're not letting you go back to explore more.
That said - favorite Kingdoms? I thought the Lost one was my favorite, and the Wooded one was cool too. Least favorite was probably the Snow area.

The Snow Kingdom was kinda boring, even later on, when the blizzard abates, and you can see the entire level.
My personal favorites are Tostarena, the Lost Kingdom, and the Luncheon Kingdom, with the Wooded Kingdom following shortly behind.

So how much extra content do you actually get after beating Bowser? I beat him at maybe 220 moons, and while I know there's 800, it seems like a lot of the added ones are pretty simple to find. Are there many more new worlds? I'm at maybe 20 hours right now, but how long can I expect it to take?

It adds three new worlds, one immediately after completing the game, another at 250ish moons, and another still at 500 (which I have yet to reach). In all the previous kingdoms, it remixes a lot of things, adding extra bits of this and that here and there, opening up new pipes to new sub-areas, ect. ect.
As for the new moons, some of them are placed in easy to reach areas, while others still are located in flat out hard to get places. Like I said above, it's a lot like Mario64 in this regard.
