Those are pictures of the original paintings used for the cutscenes, some are arranged in a collage. They came from a German manual strategy guide.
If you don't recognize them, you need to look at the T1/T2 cutscenes again! :D

LOL! I didn't knew that it was needed a manual for playing Thief. After all at that time there were no public Internet where to read some forum. :p

Comes from a time when they still took care to (almost) fully translate video games. Films had already suffered from anglicisation.
