All three games are different designs based on the same core concepts. In the same way TMA offered a different design based on the concepts introduced by TDP. There is right or wrong way to approach a Steamfantasy setting.

I am enjoying it at the moment, but the voice acting is terrible.They should have just got the Voice actors from TMA back. They wern't that good either, but at least i never cringed while listening to them.

The different look in TMA was due to an actual plot development, Karras' technological advances, not the game designers losing track of what the look of the game should be. Take away the Mechanist art-nouveau stylings and you have the medieval steampunk still there underneath it all. But the complaint isn't really about a mishandling of steampunk, but a mishandling of it as it has previously been expressed in the Thief world. I don't necessarily agree with the complaint myself, even if I miss the generators in every rich man's basement, and those troublesome electric lights seem less frequent. It's clearly different, but I wouldn't call it wrong yet.
I'd reserve that for other matters. One minor one: I'm noticing the writers didn't seem to have much of a feel for Tricksie talk. There was kind of a daft edge to it in the earlier games that's missing from the TDS pagans.
One big one: [SPOILER]I find it
really disturbing that completing an early mission apparently requires that Garrett offer a human sacrifice. I can't have been the only one who thought that was totally out of character. He's been more the type to only kill those who need killing, recognizing that it's not his business. This is virtually a standard trait for the ethical fantasy thief, going at least back to Andrew Offutt's Shadowspawn who said, "Killing's the business of them that rule." Not that I want to turn Garrett into a cliche, but a more cavalier attitude toward killing rings false.[/SPOILER] (Not much of a spoiler really, if you've gotten at all far into the game, but why risk it?)
I have already found some very sloppy map design. Like what happens when you climb over the wall trying to get to The Docks from South Quarter. I assume you eventually acquire some means of getting there, but if you're going to make it that easy to get around the gate, then let us through, for crying out loud! I have some artwork to unload! Talk about a glass ceiling...
(I do like the idea of the fences and illegal equipment dealers. Right underneath the church too. Clueless Hammers are clueless, as usual.)

Regarding your spoiler:
There is an alternative that doesn't require Garrett to kill. I don't know why it works for some and not others. It may have to do with difficulty levels, but I think it's technique. I didn't like the idea when I first heard about it, but I heard about the other method, and I relaxed. When I finally played TDS, I used the alternative method and it worked for me right off. But yeah, that would've been one more thing TDS got wrong.

I ended up killing every guard in sight during my first T3 runthrough... I was disapointed. Other than the linear gameplay, I was bothered by the unprecise game control, light gem inaccuracies (some guards appear to be able to see me when its pitch black), and various bugs and invisible walls (I died a few times by getting stuck onto walls.
But most of what bothers me in T3 appears to be inevitable, EVEN in the FMs that are currently being made:
T3 IS MONOCHROME...
Oh, if only someone could make a T3 baffords remake...

I definitely see what you mean and I agree. T3 seemed very drab and dull except in the well lit areas (I won't even go into the loot-glint thing). While the graphics may have been more advanced than those in T1 & T2 (which is understandable considering the advances being made every year in 3D graphics), I found the graphics of T3 to be rather uninspiring and gloomy.

I think it was the fact that they relied on the notion that the fancy light effects, bump-mapping etc. would make the textures look pretty, whereas with Thief 1 & 2, they actually had to put the effort into the art, rather than technical gimickry.
