I must say I loved the guards in the FM with all their scripted behaviour and somewhat unpredictable patrol routes. Also the T2 referance gave me a case of deja-vu. Some of the readables felt out of place though.

Playing now. Great mission. I love the guards AI, especially when one of the hammers outside walks over and sits down on the bench! Great effect!
Is there anything in the restaurant or its kitchen?
Also, which floor is the main floor? The one you enter when you first walk in right?

Yep, many objects appear to be unfrobbable. So far they don't appear necessary for gameplay.
