It's really sad to see that there are no real stealth games outside the Splinter Cell series, and of course the dormant Thief, that focus mainly on stealth. Am I just missing something or is this it? Is there anything on the horizon akin to either Splinter Cell or Thief (and SC itself seems to have moved away from a pure stealth gameplay).

Someone doesn't play a lot of games.
Metal Gear (the original stealth game)
Tenchu
Hidden & Dangerous
Hitman
Manhunt (avoid the 2nd one)
And that's just for starters.
Snake Eater is probably the most involved of the Metal Gear series in terms of gameplay, because you have to wear camoflauge that best conceals you, so you're often switching.
Manhunt 1 is great, although a bit repetitive. Manhunt 2 would've been better if it wasn't so blah.

Hitman is the best stealth series ever. I hate sneaking around, subterfuge is so much better it's not even funny. Metal Gear games would last an hour if you could just wear a genome soldier outfit.
