Yeah, it does sound like way too much work when you put it that way. Would it still be possible to update things like lighting without having to change the game much? For instance adding HDR/Bloom--asking because I don't know very much about 3D programming.

Yup. Any type of post process effects and prebaked lighting techniques would fit in alongside the default Thief assets quite easily. People won't have to remake any textures or models until the source coders start incorporating realtime lighting and shadows into the engine.
