IMHO
I am an old-school RE fan. I bought the original Long-Box PS1 version the week it released. I, at one time, had every single RE game. I mean every variation of every release on every console. Dead Aim and Outbreak were the end of that.
That said, RE:CV is decent, but it is LONG and the middle is boring and protracted. It is a polarizing game. You will either love it or hate it. It can also be extremely difficult and brutally unfair.
My opinion after playing through the original Dreamcast version, the PS2 and GameCube ports is simple...meh. It almost seemed like it had no 'soul' like the previous titles in the series. If anything legitimizes the existence of RE 4 (and all of its changes to the formula...i.e. a reboot) it is RE:CV

RE3 adds a bunch of stuff like an ammo maker and whatnot, but it isn't that great and the plot is full of holes big enough to drop an entire Umbrella lab into. Plus, it feels more like an expansion pack to RE2 than a full sequel, which I've said before. That said, it pretty much wraps up the Raccoon City chapter of the series, so you may want to give it a shot.
Code Veronica is long and kind of boring at times, and the final boss is horseshit, but it does feature Chris, my favourite RE character.
Neither game is bad per se, they're just "more of the same." Get 'em if you're a stickler about getting the complete plot, otherwise skip.

RE3 has an unlockable minigame that allows you to access powerful weapons and extras for the main game. It's bastard hard (The main game too, the hardest RE in the series, IMO) but getting infinite ammo for all the weapons is a sweet thing indeed.
RE:CV is a mixed bag. It's something a little different to what went before, but doesn't quite pull it off. The lack of pre-rendered backgrounds means it actually looks a bit worse than its predecessors in some regards. It has also lost a lot of the horror and classic zombie atmosphere from the first two. Coupled with a silly plot and OTT villian, it's really one for the fans. I'd recommend giving it a miss unless you're dead set on finding out what happens to Claire and Chris Redfield.
That said, it too has an unlockable minigame which does add a lot to replayablility. My friend and I spent many hours trying to finish it with Wesker.
Of the two, I'd recommend RE3 over RE:CV.

Still plugging away at RE2, I'm currently onto Claire scenario B.
First off I'm surprised at how easy this game is, especially when playing as Leon - his Desert Eagle ripped the bosses to shreds. I'm not missing the quick turn feature at all, TBH. What little that I played of REmake years ago was pretty hard, from what I recall. I got much further in RE0, but was fairly bored by the time that I got to the first Tyrant and stopped playing.
When I started playing scenario B, the game was noticeably harder than scenario A. I actually managed to run out of pistol ammo for the first time, that really got the adrenaline going and had me panicking. But in no time I've regained the Grenade Launcher and Bowgun, the basic enemies are a piece of piss again.
I have high hopes for further encounters with Mr. X, hopefully they will not disappoint.

REmake was indeed a much larger challenge I found, but dont' forget that RE2 was the 2nd game where REmake was the 6th or something like that, so they had some practice to improve the experience. But I think you'll find that the Claire A/Leon B scenario is much more difficult/rewarding that Leon A/Claire B. It's also the "true" storyline.

I broke down and bought CV GC from Ebay. At $51 USD (~$70 NZD), it had better be a decent game. My recent copies of Wolfenstein 4, Red Faction: Guerrilla and Batman: AA cost less - those are new releases.
