Also methane is a much more (
http://www.epa.gov/methane/) potent greenhouse gas than CO2.
Bugs are much less entertaining than cows though.

Pardon?

C'mon, Queue. Calling something "ridiculous pseudo-science" without actually critiquing its argument isn't going to get you very far here (it's what I love about TTLG). Deforestation and methane have already been covered in brief, but there's a hell of a lot of evidence of the inefficiency of meat (among other things, the fact that it takes about 7 pounds of grain to produce one pound of meat). This isn't something a couple of entomologists pulled out of their asses.

Is nothing sacred? They must be stopped!

Sure guys 6000 million of humans farting, eating, working, exercising, reproducing, they do not make body heat, they do not trap earth's heat by paving every possible inch of terrain.
They don't drive cars, they don't use electrically powered devices that get hot.
And they do not have factories polluting the earth atmosphere, it must be those damn cows.
Eat them all.
You know what if humans died all tomorrow I feel it would be final justice for those poor falsely accused cows.

Yeah, but I don't want to die, nor do you I presume, so what's your point?
Also if, following your weird eschatology, all humans would die tomorrow, it would be but a Pyrrhic victory for the cows, because without the proper maintenance of humans, most of them would die as well soon.
One of the problems I see with the bug substitute is that cows are used for a lot more than just meat, eg all kinds of milk products. Show me a bug that can make cheese.

deforestation in order to create grazing space for the cattle.
It's cattle raising in North America, period. It's the food industry. The whole ecosystem of North America did not evolve to support the grazing tactics of a typical cattle herd.
The way to solve this is to stop all the beef all year round with feed lots etc. etc. Instead, tear down some fences (
http://www.wildideabuffalo.com/) and raise bison the way it always was before we screwed it up. Bison's grazing habits are actually a hinge point for the native Great Plains environment, and these beautiful grasslands, when the native grass is allowed to thrive, actually helps the atmosphere as much as the rainforests of the Amazon.
The food industry is evil, evil, and their overproduction of cattle so that they can continue to train us to want every piece of beef exactly the same, all year round, and devoid of its natural flavor is destroying the environment. Good news - it's not too late to fix it. Out with the cows, in with the buffalo. Cows are not native here and it destroys the environment to try and make them so.
And, to discuss the above points, there used to be 60 million buffalo wandering around. Now there aren't that many by a long shot, but there are hella cows out there to support a destructive way of life that is environmentally unfriendly and unhealthy to boot. Next time you want to take a bite of grain fed feedlot cow, instead go get a piece of grass fed bison meat and know you are doing your part.
But yeah, I'd eat a bug burrito, could be tasty.

I for one welcome our new bug burrito overlords!

I'd eat a bug, that's no problem. I've eaten worms before. But I wouldn't drink bug milk, nor any product made from it. Cuz comeon, that'd be nasty as hell.
