Tried out T2 and SS2 in the same kind of setup as the OP, in 3D too. Mad. Very immersive the way it fills your peripheral vision, I'd consider playing the whole game that way. But for my personal taste it's more suited to things like Elder Scrolls - breathtaking open landscapes & all that. I agree with previous comments that you just 'tune out' the monitor bezels pretty quickly. Alternatively, you could rig up some fresnel lenses - positioned just right the bezels disappear, and the sense of distance is amazing, apparently. Never tried 'em myself, that's just what I've read, would like to see for myself. Projectors are great too but it's not like one's definitively better than the other, depends on your all-round usage and environment.
The issue the OP raises about the HUD is valid. I know it's behaving as expected but it's not practical in play, so a way of repositioning HUD elements would be handy. It's not too bad in Thief, it's just weird to have to turn your head so much to look at your inv. In SS2 it's bordering on unusable, you routinely have interactions or info in all four corners of the display, and the hud components are ludicrously far apart. Is there anything that can be edited to shift things around?

apart of HUD scaling, there does not seem to be anything you can do.

That's a bit of a shame. For SS2, I hadn't made my mind up which I preferred. I'd expected that triple-widescreen might spoil the claustrophobic feeling that (for me) is an integral part of the game. In practice it did feel like the the environment was more spacious, but that might have been because of the 3D, it's had that effect on other older games (eg SWAT4 & Thief 3). And having played a bit of the early game for the first time in ages, it has succeeded in scaring the shit out of me a few times, so I guess it ain't broke. But the HUD is too impractical, I don't think I'd want to do a proper play through with it like this.
Could be tolerable in Thief, probably better if you hide the health icons and rely on item hotkeys more than scrolling. Incidentally, I've often wondered if a HUD tweak's possible, because I've never been keen on weapon icons on the left & inv on the right and would switch them if I could.
