If you have an old Windows copy lying about, you can dual boot it through Boot Camp quite easily.
Alternately, if you don't like the idea of rebooting your machine every time you want to play Thief, you could try going the virtual machine route. Thief is an old game, so some of the more 3D friendly VMs, like (
http://www.parallels.com/products/desktop/whatsnew/) Parallels 6, along with a legit copy of XP or 7, should be able to run it no problem. If you set it up right, you could launch Thief in OSX as if it were a native application.

What about Wine? The game works in Linux via Wine, but I don't know if it works on Mac this way.

I don't think Macs have access to Wine directly, but they do have Crossover. It might work there.
Really, his best option is to dual boot through Boot Camp. It's dead simple to set up, and has access to every single Windows game natively. Other than having to reboot whenever he wants to use one OS over the other, there really aren't any downsides.

It's been discussed here. Game works pretty well with CrossOver Games (commercial version of wine). Only loading times are slow. I used to have a proof video to that, too, not sure if I still can find it...
I myself run it via Bootcamp, though. Runs faster, less compatibility problems and DirectSound/EAX.
