qmuddy2, you'll probably find that the majority of people here will always choose T2 over T3 as the better game to play. Give it a try on Normal and take your time. Thief is about sneaking rather than fighting. To truly appreciate it, you need to learn to go slowly and use the shadows. Once you've gotten started on it, come back for specific advice if you need help with anything. Most of us are quite nice.

In my humble opinion as a Thief and TDM amateur, I've found deadly shadows too easy, even though it starts getting difficult in the last couple of missions. But I don't think it would be a good start for you, because of some broken gameplay mechanics. If I were you I would stick with the original Thief in normal mode

Difficulty settings tend to affect number and toughness of foes, kill allowance (ie, you usually can't kill innocents on hard, and you can't kill ANYONE on expert. Note that you can still knock them out, though), how much loot you have to get, and extra objectives you have to complete. This runs true across all three games, with a few exceptions within specific missions.

Did T2X difficulty affect the hearing accutness of guards? Because starting with the Grand Hotel mission guards (with that weird iron crown/helm thing) get hypersensitive. Granted, it was marble floors, but even creeping would accuse you, making it seem impossible to ghost the level, leading to a knockout epidemic.

I'm not sure (shamefully, I never got around to playing T2X). I DO know that FM authors can adjust that setting on a per-AI basis, and a common trick is to make 3 versions of each AI, each with higher settings, and delete 2 based on difficulty.

The T2X authors swore up and down that they did NOT make any adjustments to the guard AI sensitivity.

Maybe they weren't aware that someone else on the team had done so? I just checked the Grand Hotel mission; all 8 pistol guards and 13 of the 15 sword guards have "above average" hearing. 7 of the 8 pistol guards and all 15 sword guards also have "above average" vision. At least some of the brothel guards have enhanced attributes, too.
Edit: For context, in the T2 OMs, thieves have "above average" hearing and vision, while Gervasius' guards have "above average" hearing only. All other human AIs are average for both.

Both games are easier in some ways and harder in others. I think your best bet is to just pick a game, start with the lowest difficulty level and work your way through the missions until you get used to the game.
Don't be annoyed by failing at first, you'll get better as you get used to the gameplay. Practice makes perfect. Just be patient and try various tactics and you'll only improve.
The numbers of guards (or monsters) do increase a little bit with the higher difficulties, but the main difference is that they'll be more alert on higher difficulties and will pay more attention to you running around in the light or making loud noises.
Some things you should practice from the beginning is hiding in shadows (watch the changes in the light gem to be sure you're well-hidden), walking slowly if the floor is metal or tiled, shooting water arrows into torches, knocking out guards and servants with the blackjack, and then carrying them away and hiding them in a dark corner. That's all you basically need to know to wade through pretty much any mission.
The only bad thing about the second game, IMHO, is that it lacks a tutorial level like the first and third game have. So, if you want to a have a tutorial mission before going on the first real one, start with the third game.
