Okay, i've put the resolution up too high on Thief 3 so nothing is being displayed, and now I can't work out how to change it back. Is there a .ini file I can use to change it back? I can't seem to find it.

Check Thief-DeadlyShadows (or whatever directory name you installed under)/system/default.ini. I think the lines that will help you are:
AssumedUIScreenWidth__t=640
AssumedUIScreenHeight__t=480
or maybe:
FullscreenViewportX=640
FullscreenViewportY=480
