I downloaded the following enhancements for Thief Gold/Thief 2. Did I miss anything nice?
Thief Gold:
* Thief Gold Texture Patch (Hardware Version)
* Daemonite's Thief Model Patch v1.0
* Thief Enhancement Pack Release 1
* Thief 1/2 Sound Effects Enhancement Pack
Thief 2:
* Thief Enhancement Pack Release 1
* Thief 1/2 Sound Effects Enhancement Pack
I skipped the new texture pack for Thief 2 with DDFix, because I didn´t really like the screenshots (matter of taste). I´m currently only looking for enhancements to Thief 1/2 itself, not fan-missions.

I do not recommend the neither the texture nor the enhancement patch for Thief Gold.
Thief 2 textures on Thief Gold are weird; there are of course some pretty rooms but some textures were just not meant to be used in Gold.
The ehancement patch makes the doors too hi-res in comparsion to the rest of the world, it feels unbalanced, for the loot it could be acceptable.
The only update I higly recommend is the skins and meshes pack from Thief 2 on Thief Gold, the soldiers and zombies are very cool and don't seem unbalanced with the rest of the world.
I've not yet tried the sound enhancement pack so I couldn't tell you.

There's a few different kinds. There's a skin you can download that makes the bow look more realistic and less like a bent stick with a leather handle, or there's the easter-egg that's in the Alarus extension in Thief 1/Gold. It's tricky to get to but if you stick to it, you can get in there and grab a very powerful bow upgrade.
Makes the game alot easier.

You might be missing a couple. I'm also just starting to draft a list of Thief enhancements. I need to do a little more research, though. Pardon any that duplicate your own list:
Thief G:
- Daemonite Model Patch (don't think this is obsolete)
- Orgy's Texture patch (not sure if this is obsoleted by the currently-developed Thief Enhancement Pack)
- Ultimate Difficulty Mod - old, optional, but still available, and IMO worth it
- Gaylesaver's scripts (not sure if these are necessary, or are they included in Darkloader?)
- Darkloader (which 'optimizes' the game)
- DDFix - (not sure what this is, or if I need it)
- Thief Object (and texture) Enhancement Pack
- Thief 1/2 Sound Effects Enhancement Pack (safe, just a re-encoding of the old sounds, I think)
Thief 2:
- Official Patch
- new, currently developed Thief Texture Enhancement Pack (controversial at the moment, IMO. Might play wait-and-see with this one)
- DDFix? (see above)
- Timeslip's 32 bit texture pack? (same)
- Thief 1/2 Sound Effects Enhancement Pack
- Thief Object and texture enhancement pack (see above)
I think you can only really pick one texture enhancement pack, might want to stick with the "Thief Enhancement Pack" from this thread ((

I didn't stir up much interest then, which is why I'm replying to you now, and intend to get back to the group with a bit more canonical answer. A definitive list belongs in the forum FAQ, if only to show newcomers how good Thief can look these days. It's really miraculous how this board keeps a ten-year old engine alive.

Such a list is a good idea, for sure. I suggest to dinstinguish between three kinds of stuff: 1. pure technical fixes (things that solve a specific, problem), 2. multimedia updates (that make graphics/sound better without changing the "style" of the game), 3. mods that allow you to modify the game to your personal preferences. For Thief 1 the list would look like this:
Thief 1 tech updates:
-NVidia-Fix (fixed exe that prevents black screen on NVidia cards)
-DDFix (fixes the broken dithering, game may also be more stable / crash less)
-Darkloader (required for graphic updates and mods)
Thief 1 Graphic Updates:
- Daemonite Model Patch (don't think this is obsolete)
- Orgy's Texture patch (not sure if this is obsoleted by the currently-developed Thief Enhancement Pack)
- Thief Object (and texture) Enhancement Pack
