Riddick "Escape from Butcher Bay" had very similar sneaking system as in Thief. It didn't have any hud, so no light gem, but when you were invisible enough, the screen changed it's tint and the FOV became wider. Sneaking in that game was very exciting indeed. You could also break lights to create darkness to move around unseen. You could also use club-like objects to knock out enemies, but they came to pretty quickly.

Err... no.
When I first got Morrowind I played as a thief, and I tried to be as Garrett-like as possible. It's neither rewarding nor particularly interesting, since the gameplay mechanics are completely different.
