They mean, 'disconnect' your internet connection physically...or simply disable it. Steam can't connect then.

if your internet connection's not on, Steam will ask if you want to start in offline mode.

If Steam sucks so much, why did you buy the game? I did not, even though I would have liked to, because I don't like Steam, and wont support it.

People tend to buy games if they want them spar. I wanted HL2 so I let install Steam. Sometimes you have to put up with things you know, life doesn't go exactly as you want it. The whole HL2/Steam thing does suck, but I'd complain more if I didn't like it so much.

Anyway, the rare (thankfully) times that the Steam servers were choking, it didn't ask me to play in offline mode.

That's exactly the point. Don't complain about Steam, because you willingly accepted it just to get your grubby fingers on HL2. :) Of course that's the way how it is done. If Steam were to be forced on to the customers, it would die, but wrap it with a shiny package and poeple will forget everything.
I also wanted HL2, but I didn't buy it, because I fail to see the reason why I should have Steam being forced on me like a trojan horse. I would buy HL2 the minute it would be sold without Steam, but as long as it's bundled I wont buy it, which means never, because doubt that it would ever be decoupled.

I wonder if they will offer them in future. Steam games seem overpriced.
