I'm betting tho, that it'd be a real challenge to fit such a big game on such a small screen, and also sound would be a hassle with earbuds.

Sound and graphics aren't even the biggest hurdles. Aside from the simple enormity of the task, coming up with a workable control scheme on the iPhone is no laughing matter. Check out existing much simpler FPS games on the platform to see what I mean.
On a phone with better control options it might be more reasonable (I have an N900, which has both a 800x480 touchscreen and a full keyboard (
http://maemo.nokia.com/n900/) ), but I'm not sure it'd be fun. I've been running around in Duke3D with it, and while it's definitely playable, it can be frustrating in the action. In that sense, Thief might actually work better, given the slower pace, but it would still need some serious thought and even simplification to really be fun.
